Today I Wish to chat about Kombucha. That is obviously utterly unrelated to those Banana Oatmeal Cookies, however I know you won't obey.

Let me start off by stating that my husband drinks apple cider vinegar mixed with warm water every morning to decrease inflammation or something like this.

He claims it is magical. I claim it is nasty.

While I know this will seem dramatic (cause it is), I actually dry heave at the sight and smell of the morning ritual to a daily basis. He loves that around me.

Based on this response, one would feel I would stay far away from Kombucha, directly? I suggest, after all, it certainly has a vinegary tang.

But for some reason, I continue trying it. I Wish to like it SO DANG BAD.

I enjoy these cookies a little on the undercooked side, so I bake them for 9 or 10 minutes. If you want these to be cooked through, I would shoot for 10-11 minutes.

1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

1 1/2 teaspoons pure vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats

1 cup semi-sweet chocolate chips


From the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl with an electric mixer, beat the sugar and butter until light and fluffy, about 3 minutes.

Scrape down the sides of the bowl and then blend in the egg until fully incorporated. Scrape the sides of the bowl again and add in the mashed bananas and vanilla.

Gently add the bread mixture to the banana mixture and mix until just combined.

Scrape down the sides of the bowl and then stir to recombine.

Use a moderate cookie scoop (about 1.5 tbsp ) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and gently press on the tops of each cookie with the base of a drinking glass. Since these cookies do not spread considerably, this can give them a conventional cookie form.
